Vipava 1894 D.O.O
Vines have been cultivated in Vipava since the time of the Romans. Some sources indicate that the Roman writer Pliny the Elder mentions the noble Vipava wine in his works. The Vipava Valley was an important transport route from Italy to the Pannonian region. In the Middle Ages, Morelli writes about the decision of the County of Gorizia to protect Vipava wines in Carinthia and other Austrian lands so that Italian wine would not be sold under that name. The development of viticulture in Carniola in the 17th century is described by Janez Vajkard Valvasor in his book The Glory of the Duchy of Carniola. The most thorough description of viticulture in Vipava in the mid-19th century is given by the famous Vipava native priest Matija Vertovec, who wrote the first Slovenian book on viticulture, Vinoreja za Slovence (Vinoreja za Slovence), published in 1844. He approached viticulture with a critical sense of research and tried to explain to simple wine-growers, as clearly as possible, how they should grow vines under the given conditions in order to achieve optimum results. His work is a lasting contribution to Slovenian culture. In the Vipava region, vines were once grown as a marginal crop, in flat fields, alongside stakes, willows, mulberry trees and other trees, on the terraces of sloping hillsides. In the 1960s, however, a vineyard in the Biljen Hills was restored in Vipava. For many years, the terraced vineyards in Bilje were the only major vineyards in Slovenia, and they still cover an area of 240 hectares. Our Vipava winery has made a significant contribution to the development of viticulture in the Vipava Valley, growing steadily and overcoming the challenges of the times. This is reflected in the fact that VIPAVA 1894 d.o.o. is one of the largest wineries in Slovenia.

I grew up in a family that has passed the knowledge of wine production through many generations. We believe the quality of wines comes from the roots of each vine in our vineyard deep within the soil, and not a result of oenological assets and expensive technology. We treated our vines with friendly and steady growth with minimal pressure. As a result, we get their love in the form of healthy, ripe grapes and later fine wines. We maintain the tradition of our grandparents and modern knowledge taught us how to maintain the full potential of grapes and enable their natural maturation. Thus our wines can show all the wealth that is hidden within them and ensure unforgettable moments and harmonic pleasures. With the respect that we have for each of our wine production, we keep our boutique wine small and unique as we are looking to serve customers that seeking great aromas and passionate about wine. With the great understanding that wine is a gift from nature that not just gives us pleasure but also keeps a balanced and healthy life. Medot Wines
Medot Wines is a pioneer in the production of sparkling wines using the classic method, mainly based on Rebula, in Goriška Brda - Slovenia, renowned as one of the world's finest regions for white wines. The wine tradition of the Simčič family from Medot Wines dates back to the early 19th century, but it was not until Zvonimir Simčič, a renowned oenologist poured all his knowledge into his family estate in the early 80s that Medot flourished and became a symbol of quality in wines from Brda. Zvonimir Simčič served as a long-term director of the Brda Cooperative wine cellar, was a member of the Order of Knights Ordo Equestris Vini Europae, and of the Italian Academy of Vine and Wine in Siena, and was nominated as honorable citizen in the Brda region. His merits for preservation of the autochthonous Rebula grape variety and the elevation of the quality of wines made from it, set an example far and wide, earning him the nickname “Father of Rebula”. Today his successors continue his legacy by remaining loyal to Rebula with the production of elegant and harmonious still wines mostly based on Rebula, as well the cellar’s flagship - classic sparkling wines characterized by longer maturation in the bottle and distinctively mineral and complex flavors with silky, elegant bubbles.

Our story dates back to 1968 as the first privately-owned sparkling wine producing estate in Slovenia. Our philosophy is to express our terroir in our wines and to preserve our environement throughout the whole wine and viticulture production process. Nature has granted our area, Bizeljsko, a unique terroir that made our grapes to be ideal for sparkling wine production. In addition, we are priviliged to highlight that we are among the very few producers globally who are also producing vegan wines without added sulphites while maintaining our superior quality.
